Slimming Wolrd Beef and Bean Hotpot
This unofficial Slimming World beef hotpot is a deliciously comforting family meal. It's also Syn Free with oats to thicken and topped with sliced crispy baked potatoes.

One of our favourite dishes is this unofficial Slimming World beef stew . But for a lovely change, rather than having the potatoes in the gravy sauce, we fancied them crispy.
So, say hello to my low fat beef hotpot. We don't have Lancashire roots ourselves, in fact, we're rival Yorkshire folk. But being Northern, we always have time (and room) for beef and gravied meals.
We grew up on comfort meals like these, so it's heavenly knowing they can be eaten on a Slimming plan.
There are various ingredients you can use to make a healthy Beef hotpot.
Alternatively, you could make a minced beef hotpot , vegetarian one with veggie mince and also minced lamb hotpot for a more traditional Lancashire hotpot.
In my case, however, I'm using lean diced beef, but you can tweak or adjust how you wish.
HOW MANY CALORIES ARE IN SLIMMING BEEF HOTPOT?
In this Slimming hotpot recipe, it is approximately 439 calories per person when served between 4 people. However, it's important to ensure you don't cook any of the ingredients that come in oils or added fats.
For example, we are only using lean diced beef with all fat and skin removed and Frylight. The stock is also made using stock cubes. And if in doubt, always check your with your slimming club as branded products can differ from others.
I think it's fair to say we've all been caught out from time to time. Also, it's rather high in protein per person at 27g and reasonably low in saturated fats at 8g.

To me, thicker stews are the best. There's something more comforting in its stodgier texture. I'd also put it up there with thick custards too. They just taste more filling. There are a few ways you may want to thicken your stews.
I originally made this beef hotpot using 1 tbsp of flour, working out at 1 syn each. You could even mix some cornflour with the cold beef stock very early on. I've also tried lentils and pasta on separate occasions.
And while still ok, it's not beaten my favourite method, providing I borrow a little from one of my allowances. And that is to use 2 tbsp (or 13g) of rolled oats. I don't mind donating just over 3g each of my morning porridge. It also completely disintegrates in the hotpot while cooking.
WHAT EQUIPMENT DO I NEED FOR HEALTHY BEEF HOTPOT?
Making this hotpot is very simple, so there's very little fancy equipment you'll need. However, I've put a little checklist of the essentials I used for you.
- Sharp carving knife
- Vegetable peeler
- Chopping board
- Frying pan OR
- A large lidded casserole dish or cast iron pot that can be used on a hob and then in the oven (the bigger, the more potatoes will crisp up)
Note, although I use a frying pan, then a cast iron dish, I hadn't realised the latter would work on my induction hob. (Just in case you were wondering why I used two separate pots!)
SERVING SUGGESTIONS FOR HOTPOT
If you're stuck for ideas of what to eat with your beef hotpot, then the first thing to think of to try to make a 3rd of your plate veggies. So it could be leafy greens, broccoli, cabbage, etc.
The idea is to bulk up your meals with the good stuff to help you feel fuller and more satisfied. My consultant used to say, if you're having to snack on lean foods between meals, you're not eating enough at your main meal times. However, here's a few ideas for you:
- Roasted or steamed vegetables
- Butternut squash chips
- Slimming chips
- Crushed new potatoes
- Cheesy mashed potatos
TIPS FOR STORING BEEF HOTPOT
If you've made too much or would like to batch cook, then here are my tips for storing and reheating.
? If you want to batch cook now, you can store in food bags or containers and freeze, then skip to the potato top for another day.
? Once cooked, store in an airtight container in the fridge for up to 5 days. Ideally, one that is safe in the microwave and oven.
? Store in the freezer for three months at the most.
? Defrost in the fridge as opposed to a windowsill. Or, use a defrost setting on your microwave or oven.
? When reheating, cover with tinfoil and bake at 180 degrees for about 20 to 25 minutes. This is to prevent the potatoes from overcooking and drying out. Then remove the tinfoil and bake for another 10 minute to prevent any soggy potatoes.
? If reheating in the microwave, I usually cook for the first 3 minutes. Then stir anything I can and continue for another 3 to 4 minutes.
OTHER WAYS TO COOK SLIMMING HOTPOT
Cooking healthy beef hotpot mostly in the oven isn't the only way to cook it. Here are a few other ways you could cook it to suit your lifestyle.
- In a multicooker for 40 minutes, then transfer to the oven without a lid to crisp up the potatoes
- Very gently simmer on the hob with the lid on for 1 hr 30 minutes before roasting in the oven
- Cook it in your slow cooker either low for 6-7 hours or high for 3-4 before finishing off in the oven for 30 minutes.

HOW TO MAKE BEEF HOTPOT FOR 4
INGREDIENTS
- Frylight or similar Syn Free cooking oil spray
- 400-500g lean diced beef
- 2 large onions, diced
- 2 large carrots, peeled and diced
- 13g rolled oats (approximately 2 tbsp, but always weigh to use as your Healthy Extra B or Syn accordingly
- 1 red wine stockpot
- 600ml beef stock made up with stock cubes
- 1 sprig of fresh rosemary
- 150g frozen peas
- 600g potatoes, peeled and sliced to 5mm thick
- Seasoning (salt and pepper)
METHOD
First, preheat your oven at 180 degrees. Then, spray a big lidded pan with oil spray. Ideally, the pan is suitable to go in the oven, or you could use a lidded casserole dish later.
Now add the lean diced beef and seasoning and fry until browned.
Place in the carrots and onions and fry for a further 5 minutes while stirring occasionally.
Now transfer to your chosen oven-safe dish with a lid, then add the peas, oats to thicken and red wine stockpot.
To add more juice and flavour, you then need to add the beef stock, rosemary and give everything a good stir.
Layer the slices of potatoes on top, spray again with Frylight for later and pop the lid on top.
Now bake in the oven for 1hr 30 minutes.
Once the time's up, remove the lid and bake for a final 30 minutes until the potato slices crisp up.

- Frylight
- 400 g diced beef lean
- 2 onions large, peeled & diced
- 2 carrots large, peeled & diced
- Seasoning Salt and pepper
- 13 g rolled oats (approx 2 tbsp) *to be counted
- 1 red wine stockpot
- 600 ml beef stock made up with stock cubes
- 1 sprig fresh rosemary or thyme
- 150 g frozen peas
- 600 g potatoes peeled & sliced 5mm thick

Preheat your oven at 180 degrees.

Spray a lidded casserole dish or similar with Frylight and add the beef and seasoning.

Fry until everything's browned, then add the carrots and onions and cook while stirring for another 5 minutes.

Now add the oats, beef stock and red wine stock pot and bring to a boil and stir.

Place in the rosemary or thyme and peas. Then stir again before layering the potatoes on top.

Spray with Frylight again, add the lid and bake in the middle of the oven for 1hr 30 minutes.

Remove the lid, then bake for a final 30 minutes to crisp up the sliced potatoes and enjoy!
